190 g Saclà Tomato and Olives Sauce
300 g yellow cherry (or red cherry) tomato purée
400 g minced beef
1 egg
50 g crumbs (soft inside of bread)
2 tbsp breadcrumbs
Parsley to taste
2 garlic cloves
8 slices of whole wheat bread
Salt to taste
Pepper to taste
Extra virgin olive oil to taste

Method
1 Mince the crumbs and the parsley.
2 In a big bowl mix the minced meat, the egg, the grated parmesan and the minced crumbs and parsley. Add salt and pepper. Knead until you get a smooth mixture.
3 Divide the mixture into 4 parts. Mould 5/6 meatballs for each part.
4 In a large pan add a drizzle of extra virgin olive oil and a garlic clove. When the oil is hot, remove the garlic and brown the meatballs on all sides.
5 over the meatballs with Saclà tomato and olives sauce and cook for approx. 15 minutes.
6 In another pan brown a garlic clove with some extra virgin olive oil, add the tomato purée and cook for approx. 5 minutes on high heat. Add salt and pepper.
7 Meanwhile, toast the slices of whole wheat bread in the heated oven or on a panini press.
8 Serve with the yellow tomato sauce on the bottom, the meatballs with Saclà tomato and olives sauce and the toasted slices of bread. Enjoy!
